
Giulia Galgani is the first author of a recent publication in the journal Foods titled “Bioavailability, Human Metabolism, and Dietary Interventions of Glucosinolates and Isothiocyanates: Critical Insights and Future Perspectives.”
The paper reviews the current knowledge on glucosinolates and isothiocyanates—bioactive compounds with anti-inflammatory, antioxidant, and anticancer properties—highlighting the challenges linked to their limited and variable bioavailability. The work provides an updated overview of human metabolism and dietary interventions, offering new perspectives for future research on their health effects and metabolic fate.
